Easy Egg fried rice recipe / Indo-Chinese Recipe

Egg fried rice is one of my all time favorite and easy to prepare dish. Recipe dedicated to all fried rice lovers :)


Ingredients:-

Cooked Rice - For 2 people. (You can use basmati rice or white rice. I used basmati rice)
Chopped vegetables - 1 cup (I used beans, carrot, capsicum)
Onion - 1
Green chillies - 2
Garlic pod thinly sliced - 2 tsp
Ginger thinly sliced - 2 tsp

Pepper powder - 1 tbsp
Chilli flakes - 1 tsp

Soya sauce - 2 tsp
Chilli Vinegar - 1 tbsp
Chilli sauce - 2 tsp

oil - as required
salt - as required.

Egg - 3

Take a vessal and beat the eggs and add pepper, salt and chilli flakes to it and keep it aside for at least 10 minutes. Chop the onion, vegetables and green chillies and keep it aside.



Cook the rice with little oil and salt in it. Don't over cook the rice else it will be sticky. Once the rice is cooked spread it in a wide plate and let it cool for sometime.


Heat a kadai and pour 1 tbsp of oil and add the egg mixture and stir continuously. Once it is done remove from heat and transfer to a bowl. Egg will cook very fast it will take only 1 or 2 minutes.



Heat the same kadai and pour oil into it. Add thinly sliced ginger garlic and saute till it change color slightly. Add chopped onion and saute for a minute. Add green chilli followed by chopped vegetables, salt and pepper powder. Let the vegetable get cooked for 2 minutes. The vegetable should be crunchy so don't cover it while cooking.




Add the prepared egg to this mix and add Chilli vinegar,  soy sauce and chilli sauce to this mix.  Mix properly.

Check salt and pepper. If required add as per taste. Add cooked rice to this and mix well.



As a last step add green spring onions and mix well.


Switch of the flame and cover the kadai and let it rest for five minutes.

Now serve it hot with sauce or any manchurian of your choice.

Aloo gobi Gravy / Aloo gobi Rasedar / Cauliflower Potato Curry

This dish comes under the everyday curries list. This is one of the simple and tasty curry you can prepare and have with phulkas, Chapati or rice. This dish is prepared with very less masala and oil. The main advantage of making this dish for dinner is that you can prepare sandwiches for next day breakfast with the left over curry  :-)

Ingredients required:-

Cauliflower – Separated into small florets (handful)
Potatoes – Diced – 2 
Tomatoes chopped – 2
Onion chopped – 1 
Ginger – 1 inch piece
Garlic pods – 3
Coriander powder – 1 tsp 
Green chillies –  1 
Turmeric powder – 1/2 tsp
Red Chilli powder  – 1 tsp
Cumin Seeds – 1 tbsp
Salt As required
Oil
water 1 cup

Preparation:-

1. Chop onion, garlic, ginger and green chilli and make it into a smooth paste using a blender and keep it aside.

2. Chop tomatoes, grind it to puree and keep it aside.

3. Heat oil in a pressure cooker and add cumin seeds into it.

4. Add ground onion paste to this and saute for 3 minutes.

5. Once the onion turns to light brown color add the pureed tomatoes to this and saute.

6. Saute this for 4 more minutes or till the oil separates.

7. Add turmeric powder, Chilli powder, coriander powder and salt and add little water and allow it to boil. Stir in between and cook till the oil gets separated.



8. Once this masala is ready add the cauliflower and potatoes to this and saute for 3 minutes.

9. Add 1 cup water or enough water to cover the vegetables.

10. Pressure cook it in medium till 2 whistles.





11. Garnish with coriander leaves and serve hot with roti, parathas or rice.




Tips:-
You can add peas also to this gravy.
Add more chilli powder if you like to make it more spicy. With the above measurement the gravy will come out medium spicy.
Make sure that the cauliflower is cleaned properly. Do wash and clean cauliflower and put it in hot water (add pinch of turmeric also) for sometime.

Spicy Chilli Chicken @ home

Try this easy Indo-Chinese recipe at home as a weekend special. This is very easy to prepare and it is healthy to prepare Chinese recipe at home other than having it from a restaurant. They use lots of oil, masala and ajinomoto which is not good for health.


Ingredients required:-

Boneless chicken cut into small cubes - 300 gm
Onion cut into cubes - 1
Capsicum cut into cubes - 1

Green chilli - 3
Garlic cloves - 4
Dry red chilli flakes - 1 tsp

Soya sauce - 1tsp
Vinegar - 1/2 tsp
Green chilli sauce - 1 tsp
Black pepper powder - 1 tsp
Corn flour - 1tbsp

Corn flour - 1 tbsp
Maida -  2 tbsp
Salt - As required
Oil - As required

Spring onion - for garnishing

Preparation:-

Clean and cut onion and pepper into cube size.



Take a bowl and add corn flour, maida and salt with little water and mix well. Add the chicken pieces into this and keep it aside.

Heat oil in a kadai and deep fry these chicken pieces till golden brown.




Now heat kadai with little oil and add chopped green chilli and garlic and saute well. Add chopped onions and stir for a minute. Add bell pepper/capsicum and stir for one more minute. Now add soya sauce, vinegar, green chilli sauce, black pepper powder, chilli flakes and saute well for two minutes. Now take 1 tbsp corn flour and mix it in water and pour to this mixture. Allow it to boil.




Add the fried chicken to this mix and cover it and let it cook in slow flame for 5 more minutes. Switch off the flame and garnish with finely chopped spring onions.



Tips:-
You can add sliced carrots to make it look colorful.
You can add ajinomoto for taste. I don't prefer it so avoided adding the same.

Aaloo Capsicum / Aaloo Shimla Mirch Subzi

Aaloo shimla mirch sabzi is very easy to prepare. This will go well with chapathi/roti/parata. This is an easy side dish which can be prepared on a busy weekday.

Ingredients:-

Aaloo / Potato boiled and peeled - 3
Capsicum / Shimla mirch - 3
Tomato - 2

Cumin seeds/ Jeera - 1 tsp
Oil - As required

Turmeric powder - 1tsp
Chilli Powder - 1 and 1/2 tsp
Coriander powder - 1 tsp
Salt - As required

Boil aaloo in a pressure cooker and once it is done peel it and cut it as shown in the picture.
Clean and cut the capsicum and tomato and keep it aside.



Heat a kadai and pour oil into it. Add cumin seeds, once it splutter add the capsicum and saute for 2 minutes. Now add the aaloo and saute again for a minute.


Now add tomatoes, salt, turmeric, chilli and coriander powder and saute well.


Cover the kadai and cook for five more minutes. Stir in between. Once the capsicum is done switch off the flame and serve hot with chapati or parata.

Kid's special - Beetroot rice

Beetroot is one of the vegetable which is full of nutrients. Beetroot contains folic acid, lowers cholesterol, reduces blood pressure etc etc. This vegetable is very good for growing kids.

This is a very simple recipe and kids will love to eat as it is bit sweet and colorful.

The ingredients required for beetroot rice is as below.

1. Beetroot - 1
2. Green chilli - 1
3. Curry leaves - 1 spring
4. Salt - As required
5. Turmeric powder - 1/2 tsp
6. Ghee - 1 tbsp / As required 
7. Cooked rice - 1 cup
8. Mustard seeds - 1 tsp


Preparation:-

Cook the rice with salt and keep it aside.

Grate the beetroot and chop green chilli. Heat a kadai and pour ghee into it. Add mustard seeds and curry leaves into it. After a minute add the grated beetroot, turmeric powder and salt into it and cook it till the beetroots are done.



Now mix the cooked rice with the cooked beetroot and stir for a minute. Switch off the flame and keep it covered for five minutes.

Serve hot with curd or pappad. 




Tips:-
You can add cooked peas or small pieces of potato to this rice.

How to make Veg Schezwan Fried Rice at home - Schezwan Fried Rice Recipe

This is an easy dinner idea for the family. If you have schezwan fried rice masala available at home then within ten minutes you can prepare this tasty dish. If you are in a hurry don't try making schezwan sauce at home as it is bit time consuming.

To prepare schezwan fried rice you require the below ingredients.

Cooked Rice - For 2 people. (You can use basmati rice or white rice. I used white rice)
Chopped vegetables - 1 cup (I used beans, carrot, capsicum)
Onion - 1
Green chillies - 3
Ching's miracle schezwan fried rice masala - 1 n 1/2 tsp
oil - as required
salt - as required.

Cook the rice with little oil and salt in it. Don't over cook the rice else it will be sticky. Once the rice is cooked spread it in a wide plate and let it cool for sometime.




Chop the onion and green chillies and keep it aside.



Heat a kadai and pour oil into it. Add chopped onion and saute for a minute. Add green chilli followed by chopped vegetables. Let the vegetable get cooked for 2 minutes. The vegetable should be crunchy so don't cover it while cooking.



Add the Ching's schezwan masala into this vegetable mix and stir properly for another 1 minute. Add salt also. Add cooked rice to this and mix well.



Add 1/2 tsp Chilli vinegar and 1/2 tsp soy sauce to this mix. This step is optional as you are already using schezwan masala.




Switch of the flame and cover the kadai and let it rest for five minutes.

Now serve it hot with sauce or any manchurian of your choice.



Note:-
You can garnish it with green spring onions for better taste.

Easy Egg dum Biriyani

An egg dum biriyani is an excellent weekend meal with raita and pappd. The ingredients to prepare this dish is as below.

Ingredients:-

Basmathi Rice - 2 cup
Egg boiled and peeled  - 3
Onion - 2
Tomato - 2
Green Chilli - 4
Coriander Leaves crushed - 2 tbsp
Pudina leaves crushed - 2 tbsp
Ginger Garlic paste - 2 tbsp
Curd - 1 cup
Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Biriyani Masala - 2 tbsp (Optional)
Garam Masala - 1/2 tsp
Lime - 1
Salt - As required
oil - 2tbsp / as required
Cloves - 3
Cinnamon stick - 2
Cardomom Green - 2
Cardomom black - 2
Dried Chillies - 3
Bay Leaves - 2
Fennel Seeds - 1 tsp




Method to prepare Rice:

Cook basmathi rice in water with bay leaves, cloves, cinnamon, cardomom, salt and oil. Drain the water once the rice is almost 70% cooked and keep it aside.

Method to prepare biriyani Mix:

Heat kadai and pour oil in it. Saute the remaining garam masala's like bay leaves, cloves, cinnamon, cardamom, Fennel seeds. Now add the chopped onion and saute till the onions are soft.

Add the ginger garlic paste and green chillies and saute till you get a nice aroma. Now add tomatoes and saute till its soft.

Once this is ready add crushed coriander leaves and mint leaves and saute for a minute. Add turmeric powder, chilli powder, salt and Biriyani Masala powder(I used Everest biriyani Masala). Stir it for a minute and add curd into this mix. Stir it continuously till the oil get separated from the masala. Check the salt.




Peel the eggs and give small vertical cuts on all the sides of the egg and add to this mix. Cover the pan for a minute. Switch off the flame.

Layering and Steaming the biriyani:

Now take a wide kadai and first pour some of above prepared biriyani mix into it. Layer it with some of the cooked rice and sprinkle little bit powdered garam masala (I used Everest). Cut lemon and squeeze little bit on top. Now again layer with biriyani mix and then rice. Repeat this step until all the rice and biriyani mix gets over.

Optional Step:- Take a kadai lid and seal it with aatta on the edges in a way that when you cover the kadai with this lid the steam will not go out of the kadai. If you are in a hurry then just cover the kadai with lid and follow the remaining steps.




Now cook this on a medium heat for two minutes and then put a tava on the gas stove and keep this kadai on top of that. Cook in a low flame for 10 minutes and switch off. Remove the lid after five minutes and enjoy the tasty egg dum biriyani with your favorite raita or pappad.



Tips:-

Add fried raisins or cashews to the biriyani to make it rich.
The last step layering and steaming can be done in oven also. Instead of Kadai use an oven proof vessel.
You can scramble 2 eggs and mix it with rice while layering, this gives a very good taste.
You can cut the egg into half and add to the rice.

The Tasty Tasty Aaloo Parata @ home

I love aaloo parata. I have not seen a single person who don't like aaloo parata in my friends circle. So here is the simple steps to make tasty aaloo parata.

Things you require to prepare aaloo parata is as below.

Make soft dough same as for chapathi. For more details refer to my post "Beginners guide :- How to knead the perfect dough for chapathi". Make balls of dough similar to the size of a lemon and keep aside.

Pressure cook the potatos until smooth and peel off the skin and mash it in a bowl. Add finely chopped green chilly, salt, coriander leaves, fennal seeds, cumin powder and coriander powder to the mashed aaloo and mix well. Now your stuffing for the parata is ready.

Now take the small balls of dough and make a hole in the middle. Now fill the above stuffing in this and seal it properly. Roll it out very carefully and in between dip the parata to the extra wheat flour to avoid sticking. Make sure that the sealed part is always on the top.





Heat the tawa and keep the paratta on it. When you find small bubbles gets formed on the parata just turned it with the help of a stick and apply oil.



Press the parata with the stick and cook it till its done. Remove from tawa and place it in a kitchen tissue paper. 






Have this tasty aallo parata with curd, achar or sauce according to your taste. So girls, prepare this at home, eat healthy and save money. 


Tips:-

Don't fill too much stuffing in the dough.
